Microwave Mug Chocolate Cake
Ingredients:
1 tbsp. unsalted butter
2 oz. bittersweet chocolate, chopped
1 large egg
2 tbsp. light brown sugar
1 1/2 tsp. pure vanilla extract
2 tbsp. all-purpose flour
2 tbsp. cocoa powder
1/2 tsp. baking powder
pinch kosher salt
whipped cream or whipped topping, for serving
- Place the butter and chocolate in a 10- to 12-oz round mug and microwave in 20-second intervals until smooth; let cool for 5 minutes.
- Add the egg, sugar, and vanilla to the mug and mix to combine. Add the flour, cocoa, baking powder, and salt to the mug and mix to combine. Microwave on high until still slightly under-baked in the middle, about 90 seconds. Serve with whipped cream or topping, if desired.

3 ripe bananas
2 cups oats (not instant, the proper scotts type)
1/2 cup skim milk
1 egg
2 tablespoons Splenda sugar substitute
1/2 teaspoon vanilla extract

Preheat the oven to 180c.

Mash the bananas and mix with the oats, milk and egg before adding the remaining ingredients (it just mixes a bit easier and more evenly this way). These measurements make the mixture just the right consistency for my liking, but if it looks a bit runny to you at this point, throw in another handful of oats to thicken it up.

Grease a cookie tray with 1 cal spray and spoon the mixture on to make around 9 large cookies.

Bake for around 20mins until golden brown.
Vegan Cookies
Total Time: 10 minutes
Ingredients:
- 1/3 cup peanut butter
- 2 ripe bananas (overripe is fine)
- 1 tsp vanilla
- 2 tbsp soy milk
- 2 tbsp maple syrup
- 2 ½ cups quick cooking or rolled oatmeal
- dash cinnamon (optional)
- 1/4 cup flour
Preparation:
In a large bowl, mash bananas with a fork until smooth. Add peanut butter, soy milk, vanilla and maple syrup and mix well. Add remaining ingredients and stir until well combined. Drop spoonfuls of dough onto an ungreased cookie sheet and bake 13-16 minutes at 350 degrees, or until done.
Note: This recipe is only truly sugar-free if you used unsweetened peanut butter and unsweetened soymilk, so read the ingredients list and look for soy milk that says "Unsweetened" right on the label.

Sweet Potato Casserole
Ingredients:
3 cups firmly packed unseasoned mashed sweet potatoes (3 pounds)
1/2 cup firmly packed light brown sugar
1/2 cup fresh orange juice
4 tablespoons (1/2 stick) of butter melted
2 tablespoons fresh lemon juice
2 teaspoons finely grated orange zest
1/2 teaspoon freshly grated nutmeg or 1/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon of black pepper
directions:
1. preheat oven to 350. Butter a 2 quart casserole and set aside.
2. Combine all ingredients in a large mixing bowl. beat until smooth.
3. scoop into casserole, spreading to the edge and roughing the surface. Bake uncovered on the middle oven shelf for about 45 minutes or until tipped with brown.
4. serve hot as an accompaniment to roast turkey, pork, or pork chops.
Pizza

Preheat oven to 400
Set stove on one notch above medium
Add between 1/2 and 1 cup of red sauce to the pan and cook until it is warm (about a minute after simmering) then put on back burner
Add half a pack of splenda
Put flat bread on a metal baking pan and smear sauce over it
Add half a cup of mozarella cheese and a thin layering of chedar (optional)
Bake for 8 minutes (check, it may need more time)
Raisin Scones
200 calories per scone
1 3/4 cups plus 3 tbsp flour
3 tbspoons sugar
1 tbsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
2 tbsp butter
2 tbsp applesauce
1/2 cup low fat milk
1 egg
1/3 cup raisins
Directions
preheat oven to 425
In a medium sized mixing bowl, measure 1 3/4 cup flour, 3 tbsp sugar, baking powder, cinnamon and salt. Mix together with a large spoon.
Melt butter and place in a medium bowl with the applesauce. Add milk, egg, and raisins. Stir until ingredients are blended.
Add wet ingredients to flour mixture. Stir until dough forms into a ball.
Sprinkle the three tablespoons flour on a flour surface. Flour your hands well and move dough from bowl to surface. Knead the dough by using the heel of your hand to push the dough away from you. Then with your hands, pull the dough back toward you, folding over as you pull it. Repeat this for about one minute.
Place the kneaded dough on an ungreased cookie sheet or pizza pan. Pat the dough into an eight inch circle. With a knife or pizza cutter, cut the dough into eight wedges. Place baking sheet into a preheated 425 degree oven and bake for 15-20 minutes.
Donut Muffins
Ingredients:
1/2 cup white sugar
1/4 cup margarine, melted
3/4 teaspoon ground nutmeg
1/2 cup milk
1 teaspoon baking powder
1 cup all purpose flour
1/4 cup margarine, melted
1/2 cup white sugar
1 teaspoon ground cinnamon
Directions:
Preheat oven to 375 and grease muffin cups. Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg in a large bowl. Stir in the milk and then mix the baking powder and flour until just combined. Fill the prepared mini muffin cups about half full.
Bake in the preheated oven until the tops are lightly golden- 15 to 20 minutes. While muffins are baking, place 1/4 cup of melted margarine in a bowl. In a separate bowl, mix together 1/2 cup sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted margarine and roll in the sugar, cinnamon mixture. Let cool and serve.
Cinnamon Raisin Cookies
2 cups of brown sugar
1 cup of butter
2 eggs
3 cups of flour
1 tsp. cinnamon
1 3/4 teaspoons baking soda
3/4 cup milk
3/4 cup raisins
Preheat oven 350 degrees. Cream together the sugar and the butter. Mix well and then add in the eggs. Combine flour, cinnamon, soda, and then add to the creamed mixture. Last stir in the milk and raisins. Drop spoonfulls into ungreased cookie sheet and bake for ten minutes.
Strawberry Soup
2 1/2 cups sliced fresh strawberries
1 cup half and half
1/2 cup plus 2 Tablespoons sour cream
3/8 cup powdered sugar
1/8 cup basalmic vinegar (you can get a small bottle right next to the regular vinegar at Kroger or anywhere)
Whipped cream (optional)
Place strawberries in the container of an electric blender, cover, and process until smooth.
Transfer to a large bowl. Add half-and-half, sour cream, powdered sugar, and balsamic vinegar. Stir with a whisk until smooth.
Cover and chill for at least 2 hours.
If you want, serve with a little bit of whipped cream on top and a slice of strawberry.
Phil's Health Pasta Salad
Salt and pepper to taste
1 1/2 cups uncooked orzo pasta
4 cups broccoli florets, blanched and cooled
2 cups grape tomatoes, halved
4 green onions, thinly sliced
1/2 cup pitted Kalamata olives, roughly chopped
3 tablespoons pine nuts, toasted
2 tablespoons olive oil
2 tablespoons lemon juice
1/2 cup feta cheese crumbles
Method
Bring a large pot of salted water to a boil. Add orzo and cook 8 to 10 minutes. Drain well and transfer to a serving bowl. Add broccoli, tomatoes, green onions, olives, pine nuts, olive oil, lemon juice, salt and pepper and toss gently to combine. Top with feta cheese and serve.
Christmas Cappucino Mocha Mix
In a Jar mix:
6 tbsp. and 2 tsp. instant espresso coffee powder
3 tbsp and 1 tsp of unsweetened cocoa
1 1/4 cups powdered non dairy creamer
1/2 cup and 2 tbsp. grain sugar
2 tsp. ground cinnamon
Tag Instructions: For each cup of cappuccino, measure 4 tbsp of mix into a coffee mug and stir six oz. of boiling water. Makes 2 1/2 cups of mix (enough for ten servings)
Becks Bread Pudding
Ingredients:
4 eggs
1 1/2 cups milk
3 tablespoons of brown sugar
1 tsp vanilla extract
1 teaspoon cinnamon
1/2 loaf of day old bread. Cut into Cubes
1/4 cup pecans chopped
Cooking Spray or Butter
Maple Syrup
Directions:
In a large bowl whisk eggs and milk together. Add the brown sugar, vanilla, and cinnamon.
Stir the bread cubes and pecans into the egg mixture.
Coat the 8 x 8 baking pan with butter. Pour in the bread pudding and cover with tin foil.
Let sit in the refrigerator for at least one hour.
Preheat oven to 350 degrees. Bake the bread pudding covered in tin foil for thirty minutes.
Remove the tin foil and bake for an additional ten minutes until the pudding is browned.
Serve hot with maple syrup.
Pollys Chicken
Ingredients:
boneless chicken breasts(defrost a day in advance)
butter
minced garlic
parsley
Stove Top Stuffing Mix (bread crumbs for chicken)
Grated Parmasian cheese
Directions:
In first bowl add: half stick of butter wtih garlic and then melt in microwave.
In second bowl add: Stuffing Mix (bread crumbs for chicken) and parsley and grated parmaisan cheese.
Cut each boneless chicken breast in half.
Take chicken and first roll it in the melted butter and garlic and then roll it into the Stuffing Mix.
Put the chicken in a glass dish (with no cover) and bake for a half an hour.
Pizza Chicken
Ingredients:
Boneless Chicken Breasts
Bread Crumbs
Spaghetti Sauce (or tamato sauce)
Mozarella cheese (grated)
Directions:
1. Preheat oven to 350 degrees
2. Spray baking pan with pam or butter
3. roll chicken in bread crumbs (or put chicken in a plastic bag with bread crumbs and shake)
4. spoon spaghetti sauce over chicken
5. sprinkle grated mozarella over top
6. cook uncovered for about forty five minutes.
*If you are not eating right away, you can put tin foil over the chicken and leave it in the oven on a lower setting.
MOM'S POTATO SALAD
Ingredients:
Small Red Potatoes (New Red Potatoes)
Mayonaise
Vinegar
Salt and Pepper
Parsley
Red Onion
Directions:
-BOIL A POT OF HOT WATER On High
-Dice one bag of ''new red potatoes'' (they should come in a net bag)
-Put the potatoes into the pot for ten minutes
-Once the potatoes are not too soft, empty the potatoes into a civ.
-Cut up half of an onion
-Empty the potatoes and the onions into a dish
-add 1 tablespoon of vinegar
-add some parsley
-add salt and pepper
-mix all of that and let sit over night
when ready to serve, dump some mayonaise on it and stir.
HUMMUS
Ingredients:
2 cans of 16 0z canned garbanzo beans
tahini (harris teeter, it comes in a can)
lemon juice
salt
garlic
olive oil
paprika
parsley
Directions:
Drain 2 cans of Garbanzo beans and save the juice.
Put the beans in a blender with 1/4th cup of the garbonzo juice.
Add 1/3 cup of Tahini to blender
Add 1/4 cup lemon juice to the blender
Add 1 tsp of salt into blender
Add 1 1/2 table spoons of garlic into blender
Drizzle olive oil over the blended mixture. Sprinkle a pinch of paprika and a teaspoon of parsley over the top.
POLLY'S BROWNIES
ingredients:
butter
brown sugar
flour
salt
baking POWDER
eggs
vanilla
walnuts
Directions:
Preheat oven to 350. Mix into one bowl: 1 and 1/2 tsp melted butter with 2 cups of brown sugar.
Mix into second bowl: 1 and 1/2 cups flour and half tsp of salt and 2 tsp of baking powder.
Combine bowls and add: 2 eggs, 1 tsp vanilla, and one cup of chopped walnuts.
Cook for 25 minutes

Ingredients:
Boneless Chicken Thighs/breasts (thighs taste better)
Cream of Mushroom Soup
Wine
Sour Cream
Parsley and Dill
Salt and Pepper
Directions:
-Put Chicken breast pieces in a casserole dish. (IF YOU DON'T HAVE A CASSEROLE DISH, USE GLASS DISH PAN WITH TIN FOIL OVER TOP)
- In a separate bowl, mix a can of cream of mushroom soup and 3/4 container of sour cream.
- Sprinkle chicken with salt and pepper
- pour mushroom soup and sour cream mixture over the chicken
- splash about a half a glass of white wine on top and add parsley or dill
Bake at 350 for an hour.
Mom's Chicken Salad
Ingredients:
Boneless chicken breasts
Mayonaise
White Onions
Grapes
Salt and Pepper
Parsley
Directions:
Boil Chicken in a pot for about 20 minutes (check by cutting a piece out of the middle of the chicken and if it's white- it's cooked.)
Tear chicken into shreds.
Chop onion and grapes.
Add salt and pepper and parsley.
Put in a couple of big spoonfulls of mayonaise in.
Mix it up and put it in the fridge.
